Halloumi Veggie Burger Bagel

If you’re a vegetarian, you don’t need to miss out on National Burger Day (which is today in case you were wondering) – try this tasty halloumi burger from the New York Bakery Co. Another veggie on to try is this falafel one from lovecannedfood.co.uk


Serves 2

Ingredients:
2 New York Bakery Co. Cheese Bagels
2 x 1 cm slices aubergine
4 thin slices courgette
½ pack halloumi, thickly sliced
2 leaves lettuce
1 tomato, sliced
2 tablespoons pesto
Heat a griddle pan until hot. Griddle the vegetables on both sides
until lightly charred. When the vegetables are ready, season well and
remove from the pan to make space for the halloumi. Griddle the
cheese on both sides until soft and lightly charred.
While the halloumi is cooking, slice the Cheese Bagels in half and toast both halves. Top the bottom half
of each bagel with half the lettuce and tomato, follow with the courgette and halloumi slices. Add the
aubergine and pesto. Finish with the top halves of the bagels.
