Ever wondered how to eat that light green fruit-looking vegetable with the strange name choko (or chayote)? When the neighbour’s chayote plant grew wild over the fence, I decided to pick one and give it a try. As it turned out, every bite of this funny looking vegetable was crunchy, juicy and sweet.
Like with so many green vegetables, the key to bring out the best of natural flavors is cooking fast and keeping it simple. The simple stir-fried choko may not be the obvious candidate for a photo-op, it is nevertheless clean, fresh and appetizing.
STIR-FRIED CHOKO (CHAYOTE)
VEGAN / GLUTEN-FREE / QUICK DISH
MAKE 2 servings PREPARATION 5 min STIR FRY: 2 to 3 min
Ingredients
- 1 medium-sized choko (chayote), peeled and sliced
- 3 cloves of garlic, crushed, peeled and finely chopped
- 1 tbsp oil
- A pinch of salt
Method
- Heat a wok on high heat. Add the oil and salt, then sauté the garlic until fragrant, about 20 seconds.
- Add the choko slices, stir fry for 2 minutes or until it has a translucent appearance but still firm. Remove from the wok and serve.
Recipe Notes
- Raw choko are perfectly safe to eat, so there is no need to worry about under-cooking for safety reasons.
