  • 6 eggs
  • 1 teaspoon soy sauce
  • 2 tablespoons sugar
  • A pinch of salt
  • Tablespoon of rice wine
  • Vegetable oil
  • 1 toasted nori seaweed
  • 150 grams sushi rice (prepared)

  1. Crack open the eggs in a bowl, add 2 tablespoons of water. 
  2. Add in soy sauce, salt, sugar, and rice wine. 
  3. Whisk the ingredients. Avoid making it frothy. 
  4. Now, brush a hot pan with oil and pour a thin layer of the egg mixture. Let it stand over medium heat until bubbles appear. Using a spatula, lift the edge, fold it over twice. Brush the free space with oil and pour a thin layer of egg mixture, promptly lifting the edge to let raw egg run underneath. Keep repeating until the omelette is approx. 2 cm thick.
  5. Cool the cooked omelette. Cut it in half crosswise, and then further chop those halves into four equally sized rectangles. 
  6. Cut the nori sheet into eight 2 cm wide strips. Prepare the sushi rice into 8 rectangular blocks.
  7. Top the rice blocks with a slice of omelette each and gently press with your palms. Wrap each in a strip of nori. Seal with a few grains of rice.
